I'm Back!

Greetings members! I am happy to say that I am back from my dietetic internship in Los Angeles! I had many great experiences at Harbor-UCLA Medical Center and UCLA Acosta Athletic Training Center. I learned a TON, and I cannot wait to help you with your nutrition and fitness goals. Whether you desire weight loss or a personal PR, a balanced diet can help get you there! Healthy Yam & Black Bean Burritos

Yam & Bean Burritos

Serves 8









2 large yams, peeled and cut into chunks
1 Tbsp + 1 tsp canola oil, divided
½ onion, diced
1 (15oz) can black beans, rinsed and drained, or 2 cups cooked black beans
½ tsp cumin
Salt and pepper to taste
8 whole wheat tortillas


Preheat oven to 375°F. In a large mixing bowl, toss yam chunks with 1Tbsp oil. Spread coated yams on a baking sheet and roast in the oven for 20 minutes or until yams are tender. In a large skillet, heat 1 tsp oil over medium-high heat. Add beans, cumin, salt, and pepper to taste. Remove from heat and mix in cooked yam chunks, stirring gently. Spoon mixture into the center of each tortilla, roll up the tortilla and serve.
